Tends machine that kneads dough to desired texture: Sprinkles roller and catching apron of machine with flour to keep dough from sticking. Starts machine and turns handwheels to adjust distance between rollers. Cuts off lump of dough in trough and inserts dough between rollers. Catches dough as it extrudes from machine and reinserts it at different angles until texture reaches desired consistency.
